For the Lettuce

Ingredients

  • 2 head Lettuce
  • 5 g Extra-virgin olive oil

Directions

  • 1 Wash both lettuce heads and drain well.
  • 2 Cut them in half and grill with a dash of olive oil until they are lightly browned on each side.

For the Yondu, Light(Jang Sauce)

  • 1 In a mixing bowl, add water, Yondu, Light(Jang Sauce), and xanthan gum and whisk until a smooth and uniform sauce is obtained.

Presentaion

  • Fleur de sel
  • 1g Freshly ground black pepper

Directions

  • 1 Serve the lettuce on a plate for presentation and dress generously with the Yondu, Light(Jang Sauce) mixture.
  • 2 Finalize the dish with some flakes of Fleur de sel and freshly ground pepper.
