Vermicelli Carrot Salad
- 4 oz Vermicelli rice noodles
- 1 Small carrot, julienned
- 1/4 Onion, thinly sliced
- 1 cup Mixed greens
- 5 Tbsp Gochujang with Lemon, Korean Chili Sauce, Gluten-Free
- 1 Tbsp Oil (optional)
- 1 Cook noodles following instructions on the package.
- 2 In a bowl, combine all the ingredients and stir well. Serve chilled.
TIP Make sure to add the greens right before serving to avoid them to wilt.
