Stir-fried Udon with Vegetables
- 150g Udon noodles
- 1 Tbsp Oil
- 50g Shiitake mushrooms, sliced
- 1/2 Bell pepper, sliced
- 1/2 Small Red onion, sliced
- 50g Snow peas (mange tout)
- 2 Tbsp Stir-fry Sauce
- Spring onion, chopped
Cook the noodles following package instructions(about 3 mins), strain then rinse, and reserve.
In a pan over high heat, add oil and stir-fry all the vegetables. Try not to overcrowd or stir too much; stir-fry in two batches if necessary.
Once the vegetables are cooked, add the reserved noodles and Sempio Stir-fry Sauce to the pan. Cook on high for 1 min, stirring frequently.
Sprinkle some chopped spring onions.
