Cauliflower Fried Rice
- 1/4 Zucchini, diced
- 1/4 Onion
- 1 Bell pepper, diced
- 1 Tbsp Olive oil
- 200g Cauliflower rice
- 2 Tbsp Stir-fry Sauce
- 1 In a pan over high heat add zucchini, onion, bell pepper, olive oil and stir fry for 3 minutes with minimal stirring to char the veggies.
- 2 Add cauliflower rice and stir fry for 2 more mins.
- 3 Turn off the heat, add stir-fry sauce and stir well.
TIP To make cauliflower rice just trim a cauliflower with a knife or chop it in a food processor in short on/off pulses. You can use any vegetables you have in hand such as broccoli, mushrooms, asparagus…or even cucumber!
